However management of both food allergy, by patients and health practitioners, and allergens, by industry, is thwarted by lack of evidence to either prevent food allergy developing or protect adequately those who are already allergic. I will be working on the project to evaluate the assocation between maternal and infant nutrition and the development of allergic disease.
  • ODIN - Food Based Solutions for Optimal Vitamin D Nutrition and Health through the Life-Cycle. I will be evaluating vitamin D status in early life and development of childhood asthma and allergies.

Administered a screening questionnaire over the telephone. Analysed vitamin D and calcium intake through a food frequencies questionnaire (FFQ) . Contacted participants for baseline, mid- and end-point visits. Provided participants with study supplement at baseline visit and compliance at mid- and end- point visits was determined by a pill count. Clinical assessments were performed at each visit.

  • Worked as part of a small team in the first prospective birth cohort study in Ireland, Cork BASELINE Birth Cohort. It involved a interdisciplinary team led by a team of principal investigators from pediatrics, nutrition, dermatology, food allergy, neurological and development.
  • Postnatal visits involved detailed questioning and clinical assessments (anthropometry, body composition (PEAPOD) and assessing eczema).
  • Measured serum 25-hydroxyvitamin D in umbilical cord blood by liquid chromatography tandem mass spectrometry (LC-MS/MS) technology, a gold standard method method when NIST standard reference materials are applied.
  • Conducted data analysis through SPSS, using basic descriptives through regression analysis.
  • Attended and presented at conferences nationally.
  • Demonstrated to undergraduate Nutritional Science students, provided guidance to final year and MSc students.
